Mushroom Dumplings in Brodo, by Chefs Karla Lawrence and David Jones



Crack two eggs into a flour "well." Add salt and knead.



Keep kneading until…

…you've created a smooth dough.


Flatten dough with a rolling pin and cut into strips. Then feed the strips into a pasta machine until they're super thin. Voilá! You've made pasta!



To make the filling, chop onions and wild mushrooms.



Sauté with olive oil, butter, salt and pepper. Let the filling cool.



Cut pasta into rectangles, and add the filling.



Fold the pasta/filling into little triangles.



Freeze or chill the dumplings, bring seasoned broth to a boil, drop in the dumplings and voilá again! Perfect Mushroom Dumplings in Brodo! Add glass of wine and enjoy!
